Thanks for the opportunity
to serve you, and for your openness to learning about how
to truly nourish yourself and your loved ones.
I'm inspired in so many ways by all the people I get to
meet through this work; it's a blessing.
Whether you're a client, colleague, class participant,
friend, relative, or acquaintance, I'm glad we're on the
journey together, and I look forward to seeing where it
takes us. This time of year I'm reminded of all the beauty that's
around us, all the time... Raymond captured the "dear
deer" above as they passed through our backyard
yesterday. They're so graceful and pretty, I forgive
them for eating the shrubs!May the end-of-year festivities and reflective
time bring sweetness, fun and joy to your life

Date-Clementine
Butter
I was inspired to come up with this
little recipe by Alex, who recently hosted a gathering of
women in her home to experience a healthy cooking demo and
Feldenkrais movement exercises, led by Kathy Yates. When
we were planning the menu, she suggested a flavored butter to
accompany whole-grain bread. Since I never really
thought about flavored butters before, that sent me on a hunt
for ideas (that's one of my favorite things to do in this work
-- read about food!). Who knew there were so many
options? After checking out several permutations, I
literally "mashed up" the 3 ingredients for a wonderfully
tasty spread. It would be fantastic, too, added to oatmeal or
other cooked breakfast cereal. We absolutely need good
quality fats in our diet, and in moderation, real butter can
be that for most of us -- so a little goes a long way, and
gives much eating pleasure.
Ingredients
- 1 stick unsalted organic butter, room temperature (try
cultured, "European-style" butter for extra flavor; or use a
good-quality vegan spread)
- 1 oz. pitted dates, finely chopped
- 1 T Clementine zest (or use the zest of any
orange/tangerine)
- Splash of Clementine juice
Directions In the bowl of
a small food processor, or using a wooden spoon, combine all
ingredients until well-blended. Taste for flavor
balance, and add a little more of whatever you think it
needs! Scrape into a small bowl and refrigerate until
use.
